Locally owned Peyrassol West is a sophisticated yet welcoming bistro that brings the flavors of Europe to the Pacific Northwest. Known for its curated selection of fine wines, artisanal cheeses, and a refined, shareable menu, this charming eatery is a favorite of locals and visitors alike. Husband-and-wife duo Scott Cory and Sachia Tinsley opened the Normandy Park restaurant in 2024, bringing their decades of experience in hospitality and the culinary arts. Tinsley has worked in numerous renowned Seattle restaurants, and co-opened Osteria La Spiga in 1998. Cory, a sommelier, has more than 30 years of experience in the wine industry.
