Recipe: Airways Brewery Beer Battered Crepes

Need an easy brunch idea? Try these crepes using Airways Brewery's Pre-Flight Pilsner, or another beer that is light on hops. There are endless filling possibilities, from sweet to savory.

Time: 30 minutes Servings: 7-8 Crepes Cooking Level: Easy

Ingredients
• 1 cup all-purpose flour
• 1 cup Pre-Flight Pilsner, room temperature
• 4 eggs, room temperature
• 2 tablespoons vegetable oil
• 1/4 teaspoon salt

Directions
Whisk flour, beer, eggs, 2 Tbsp. vegetable oil, and salt in a large bowl until smooth.

Heat 1 tsp. vegetable oil in an 8-inch crepe pan over medium heat.

Pour 1/4 cup crepe batter into center of pan. Tip and rotate the skillet until batter covers the entire area. Cook until the batter turns from wet to moist, and the edges begin to curl away from the sides of the skillet. Flip crepe and continue cooking until lightly golden on the other side.

Place finished crepes on plate, and cover with a kitchen towel to keep moist until filling. Repeat with remaining batter, lightly oiling the skillet as needed.

Top crepes with filling, then roll and serve seam side down.

Filling Ideas: For a sweet filling, whip together 8 oz. cream cheese, 1/4 cup white or brown sugar, and 1 cup of whipped topping. Spread on crepe, and top with fresh berries, peaches, or bananas before serving. For a savory crepe, try using cheese, eggs, sausage, salami, herbs, green onions, or tomatoes, or other fresh greens and vegetables.
